

Kefir is an ancient food that has been cultivated
and consumed by the Caucasian population for thousands of
years. It is an enzyme-rich food that helps to rebalance the

be fermented with milk. In this process, the microbes and
yeasts create a soluble-polysaccharide structure called Kefiran,
and are also harboured by the structure that they create,
